The Wirz vineyard is located in Cienega Valley (San Benito County), in the foothills of the Gabilan Mountain Range ~1100 ft above sea level and ~25 miles from the Pacific Ocean. The Riesling vines are approximately 50 years old grown on granite and limestone soils. The vines are head trained and dry farmed with the exception of the last two drought years they received minimal winter supplemental water.
My original intention with this wine was a still wine, however, as much as I like acid, the wine was bracingly tart. I had missed the window of opportunity to leave some residual sugar and so my next thought was- make it sparkling! The wine was made by the traditional champagne bottle method. The wine spent 13 months under tirage and upon disgorgement a very slight dosage for balance was added.
Aromas of pear, lime, and hint of blossom. Also heady biscuit and bread. On the pallet the wine is Brut, dry, with a surprisingly rich body. Beautiful clean finish.
